After learning their trade at Gavroche, Stephen Tozer et Ed Brunet opened their brick-and-mortar Bab in 2016, since then joined by chef Manu Canales. So, kebab is their thing. But not just any kind. The thought-through, made of seasonal ingredients and handsomely plated kind, served in a Mediterranean-style tiles setting, with a concrete top bar and copper details.
So? The thin homemade flatbread wraps joyfully the free-range pork shawarma, crispy pork cracklings play their part, while the chicory, pomegranate and shallots salad refreshes the whole. As for the inevitable French fries, they go dirty deep in the stout-stilton sauce.
