01 Oct Core by Clare Smyth
After handling Gordon Ramsay’s stars, Clare Smyth flew solo in her bright Notting Hill white house, now rewarded with her own two macarons. Adorned with blond wood bookcases, celadon green accents and not a tablecloth in sight: muted but definitely not stiff.
From the kitchen-bay window, they chisel with head chef Johnny Bone ultra sophisticated plates, turning on the best of British produce: delicate woodland scene of nibbles; famous posh take on fish & chips – turned potato and trout roe in a sea of dulse beurre blanc and herring; soft skate swimming in brown butter, escorted by Morecambe Bay shrimps and Swiss chard; tender charcoal shortib with a soft stuffed Roscoff onion; elegant pink grapefruit and lemon verbena meringue… Savour it to the pace of the flawless service.
