It’s in Bologna that the idea of a “joy and respect”, ancient flours and organic ingredients-based pizzeria came to Matteo and Salvatore Aloe. After opening five restaurants in Italy, their London outpost opened with Emma King (Gail’s) is named after a free local radio in the 70s.

Right on Hoxton Square, it’s big, loud, fun, colourful and open-oven. Flour bags pile up, the mortadella-dried apricots snack disappears in two seconds, the nduja-caciocavallo-tomato or gorgonzola-speck-honey-fiordilatte-walnuts sourdough pizzas are crispy and pre-shared, and the mandarin-tonka bean freshly wakes the mouth up. A simple and friendly dolce vita, enhanced by a few glasses of Libera Terra anti-mafia wines.
